Taco Stuffed Bell Peppers Recipes

These Taco Stuffed Bell Peppers were a childhood favorite in my family—the only way my parents could get all of us kids to eat rice! Now, my husband Dan and I make them at least twice a month because they’re so easy and packed with flavor. As a kid, I’d skip the peppers, but now they’re my favorite part! Dan loves how the cheesy topping gets crispy in the oven (so much that he steals the tops off mine too!).

Ingredients

  • 3 large bell peppers, halved and seeded

  • ½ lb ground turkey

  • 1 (16 oz) can black beans, drained and rinsed

  • 2-3 cups cooked rice

  • 4 oz jalapeño cream cheese

  • ½ cup barbecue sauce (we love Sweet Baby Ray’s Hot & Spicy!)

  • 2 tbsp olive oil, divided

  • ½ cup grated Parmesan cheese

  • 1 tbsp garlic salt

  • 1 tbsp black pepper

  • 1 tsp chili powder

  • 1 tsp Cajun seasoning
