  • 1 pound (450g) chicken breast or thighs, cut into bite-sized pieces
  • 225g egg noodles (or your preferred type)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, chopped
  • 1 bell pepper (red, yellow, or green), thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas or sweet peas
  • 1 medium carrot, sliced
  • 1 cup chicken or vegetable stock
  • 3 tablespoons soy sauce
  • 1 tablespoon hoisin sauce (optional, for sweetness)
  • 1 teaspoon dried thyme or Italian seasoning
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley (for garnish, optional)
