🧂 Ingredients:
1 tbsp olive oil or butter
1 medium onion, diced
3 cloves garlic, minced
2 large carrots, sliced
2 celery stalks, sliced
6 cups low-sodium chicken broth (or no-salt if desired)
2 cups cooked chicken breast, shredded or chopped
1½ cups egg noodles (or your preferred noodles)
½ tsp dried thyme
½ tsp dried parsley (or 2 tbsp fresh parsley, chopped)
Salt and pepper, to taste
Optional: squeeze of lemon juice for brightness
