Homemade Chicken Noodle Soup Recipe

Sauté the vegetables:
In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook for about 5–7 minutes, stirring occasionally, until they start to soften.
Add garlic and herbs:
Stir in the garlic, thyme, and a pinch of pepper. Cook for another 1–2 minutes until fragrant.
Add broth and chicken:
Pour in the chicken broth and bring to a gentle boil. Add the cooked chicken and reduce heat to a simmer.
Cook the noodles:
Add the noodles and simmer until tender, about 8–10 minutes (check your noodle package for time). Stir occasionally.
Season to taste:
Taste the soup and adjust with salt, pepper, and a bit of lemon juice if using. Stir in chopped fresh parsley right before serving.
Serve hot:
Ladle into bowls and garnish with extra parsley for color and freshness.
