GARLIC-BUTTER-POTATOES-STEAK

Ingredients

For the Potatoes:

  • 26 oz (740g) Yukon gold potatoes, washed and cut into 1-inch chunks

  • ¼ cup (65mL) diced onion

  • 2 tsp fresh parsley, chopped

  • ⅓ cup (85mL) cooked bacon, diced

  • ⅓ cup (85mL) sliced green onions or shallots

  • Salt and black pepper, to taste

For the Steak:

  • 2 lbs (908g) ribeye or tenderloin steak, sliced into 2-inch thick pieces

  • ½ cup (125mL) garlic butter, divided (see note)

  • ¼ cup (65mL) shredded cheddar cheese

  • ¼ cup (65mL) shredded mozzarella cheese
