Instructions

  1. Prep the Grill: Preheat to medium-high heat (about 400°F/200°C).

  2. Season Potatoes: In a bowl, toss potatoes and onions with half the melted garlic butter, parsley, salt, and pepper. Set aside.

  3. Prep Steak: Pat steak dry, then coat evenly with the remaining unmelted garlic butter. Season generously with salt and pepper.

  4. Assemble Packets:

    • Tear 4-6 large (15-inch) foil sheets. Divide steak and potatoes among them, placing ingredients on one half of each sheet.

    • Fold foil over, sealing edges tightly to create a leak-proof packet.

  5. Grill: Place packets on the grill, cover, and cook for 7 minutes. Flip and cook 5 more minutes, or until potatoes are tender.

  6. Add Cheese & Toppings: Carefully open packets (watch for steam!), sprinkle cheeses over potatoes, and close the grill to melt (2-3 minutes). Top with bacon and green onions.

  7. Serve: Enjoy straight from the foil or transfer to plates.

Note: For garlic butter, mix ½ cup softened butter with 2 minced garlic cloves and 1 tsp parsley.
