  • 1 red bell pepper, thinly sliced

  • 200g (7oz) raw king prawns, peeled & deveined

  • 1 tbsp Cajun seasoning

  • 150ml (⅔ cup) double cream

  • 100ml (½ cup) chicken stock

  • 50g (¼ cup) grated Parmesan cheese

  • Salt & black pepper, to taste

  • Fresh parsley, chopped (for garnish)
