Creamy Cajun Prawn Pasta

Instructions:

  1. Cook the pasta: Boil the penne in salted water according to package instructions until al dente. Drain and set aside.

  2. Sauté vegetables: In a large pan, heat olive oil over medium heat. Add the onion and cook for 5 mins until soft. Stir in the garlic and bell pepper, cooking for 2-3 mins more.

  3. Cook the prawns: Add the prawns and Cajun seasoning, stirring until the prawns turn pink and are cooked through (3-4 mins).

  4. Make the sauce: Pour in the double cream and chicken stock, stirring well. Bring to a gentle simmer.

  5. Add cheese & season: Stir in the Parmesan until melted and the sauce is creamy. Season with salt and pepper to taste.

  6. Combine & serve: Toss the cooked pasta in the sauce until well coated. Garnish with fresh parsley and serve immediately.
