  • 2 cups water
  • ⅔ cup canola oil

  • 3 x 9-inch round cake pans
  • 1 x 10-inch cake board

  • 1½ cups unsalted butter, softened
  • 3½ cups powdered sugar
  • 3–5 tbsp heavy cream
  • 2 tsp coconut extract
  • ½ cup coconut rum
  • 4 cups sweetened shredded coconut (2 x 8oz bags)
