👩🍳 Step-by-Step Instructions
1️⃣ Bake the Cake Layers
- Preheat oven to 350°F (175°C) and spray pans with baking spray.
- In a large bowl, beat cake mix, egg whites, water, and oil until smooth.
- Divide batter evenly into 3 pans.
- Bake for 28–32 minutes or until a toothpick comes out clean.
- Let cool completely on a wire rack.
2️⃣ Make the Frosting
- Beat butter until fluffy, then gradually add powdered sugar, coconut extract, coconut rum, and cream.
- Whip until smooth and slightly stiff peaks form.
- Chill if needed to firm up before frosting.
3️⃣ Build the Cake
- Level each cake layer by trimming the dome off with a serrated knife.
- Place first layer on cake board and spread 1 cup frosting evenly.
- Add second layer, repeat frosting.
- Place third layer on top and frost the entire cake.
- Press shredded coconut gently onto frosting to coat the whole cake.
