- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade blend: chili powder, cumin, paprika, salt, pepper)
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can tomato sauce
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup black beans, drained and rinsed (optional)
For Assembly:
- 8–10 small flour or corn tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
Optional Toppings:
- Sour cream, guacamole, salsa, chopped cilantro, sliced jalapeños
