Instructions:
Step 1: Preheat the Oven
- Preheat oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish with cooking spray or oil.
Step 2: Cook the Meat Mixture
- In a large skillet over medium heat, cook the ground meat until browned, breaking it into small pieces with a wooden spoon. Drain excess fat if needed.
- Add the onion and garlic, cooking for 2–3 minutes until softened.
- Stir in the taco seasoning, diced tomatoes, tomato sauce, corn, and black beans (if using).
- Simmer for 5–7 minutes, stirring occasionally, until flavors meld. Remove from heat.
Step 3: Assemble the Bake
- Spread a thin layer of the meat mixture on the bottom of the baking dish.
- Place 3–4 tortillas over the meat, overlapping as needed to cover.
- Add another layer of meat mixture, followed by a generous sprinkle of cheese.
- Repeat layers, ending with a final layer of tortillas, topped with remaining meat and a thick layer of cheese.
Step 4: Bake
- Cover with aluminum foil and bake for 20 minutes.
- Remove foil and bake uncovered for 10–15 minutes, until cheese is bubbly and golden.
Step 5: Serve
- Let cool for 5–10 minutes before slicing.
- Top with optional garnishes and serve warm.
