Mediterranean Seafood Stew with Tomato Broth & Crispy Toast

Ingredients:

1/4 cup olive oil

1 small onion, finely chopped

3 garlic cloves, minced

1/2 tsp crushed red pepper flakes (optional)

1/2 cup dry white wine

1 can (14 oz) crushed tomatoes

2 cups seafood or fish stock

Salt and freshly ground black pepper

1/2 lb firm white fish (like cod or halibut), cut into chunks

1/2 lb large shrimp, peeled and deveined

1 lb fresh mussels, cleaned and debearded

2 tbsp fresh parsley, chopped

1 tbsp fresh basil or thyme (optional)

Lemon wedges, for serving

For the Toast:

Slices of rustic bread (like sourdough or ciabatta)

Olive oil, for brushing

1 clove garlic (for rubbing toast)
