Easy Bacon Jalapeño Mac & Cheese

Ingredients

Mac & Cheese:

  • 8 oz pasta (rotini, shells, or macaroni)
  • ½ lb bacon, diced
  • 1–2 jalapeños, diced
  • 3 tbsp butter
  • ⅓ cup flour
  • 3 cups half & half (or ½ heavy cream + ½ whole milk)
  • 2 cups cheddar cheese, shredded
  • 1 cup pepper jack cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • Salt & black pepper, to taste

Crunchy Topping:

  • ¾ cup Panko breadcrumbs
  • ¼ cup parmesan
  • 2 tbsp melted butter
