Tom Kha Gai Recipe

Ingredients:

  • 1.5 cups (400ml) coconut milk (full-fat for best flavor)

  • 1.5 cups (350ml) chicken stock (or water)

  • 1 lb (450g) boneless chicken breast or thigh, thinly sliced

  • 1 cup (100g) straw mushrooms (or oyster/button mushrooms)

  • 2-3 stalks lemongrass, bruised & cut into 2-inch pieces

  • 3-4 slices galangal (or ginger if unavailable)

  • 3-4 kaffir lime leaves, torn (optional but recommended)

  • 2-3 Thai chilies, bruised or sliced (adjust to spice preference)

  • 2 cloves garlic, minced

  • 2 tbsp fish sauce (adjust to taste)

  • 1.5 tbsp lime juice (or to taste)

  • 1 tsp palm sugar (or brown sugar)

  • ¼ cup cilantro, chopped

  • shallot, thinly sliced (optional)
