2-3 stalks lemongrass, bruised & cut into 2-inch pieces

3-4 slices galangal (or ginger if unavailable)

3-4 kaffir lime leaves, torn (optional but recommended)

2-3 Thai chilies, bruised or sliced (adjust to spice preference)

2 cloves garlic, minced

2 tbsp fish sauce (adjust to taste)

1.5 tbsp lime juice (or to taste)

1 tsp palm sugar (or brown sugar)

¼ cup cilantro, chopped
