Zucchini and Vegetable Savory Bake

Instructions:

  1. Prep the veggies: Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. Season & layer: In a large bowl, toss zucchini, bell peppers, eggplant, onion, garlic, and tomatoes with olive oil, oregano, basil, paprika, salt, and pepper. Spread evenly in the baking dish.
  3. Add cheese: Sprinkle Parmesan (and mozzarella, if using) over the vegetables.
  4. Bake: Cover with foil and bake for 25 minutes. Remove foil and bake another 15–20 minutes until veggies are tender and cheese is golden.
  5. Garnish & serve: Let cool slightly, then top with fresh herbs. Enjoy warm!

Optional Add-Ins:

  • Add cooked quinoa or chickpeas for extra protein.
  • Swap cheeses for feta or goat cheese for a tangy twist.
