Step-by-Step Instructions
1. Prep the Potatoes

Wash & Cut – Peel (optional) and slice potatoes into even sticks.

Vinegar Soak – Mix 1 part vinegar to 3 parts water in a bowl. Soak the fries for 30 minutes to 2 hours (longer soak = crispier results).
2. Rinse & Dry

Rinse Well – Drain and wash off excess vinegar under cold water.

Dry Completely – Pat dry with a towel (moisture is the enemy of crispiness!).
3. Double-Fry for Perfection

First Fry (Blanching)

Heat oil to 325°F (160°C).

Fry in batches for 5-6 minutes until tender but not browned.

Drain on paper towels and let cool for 20-30 minutes.

Increase oil to 375°F (190°C).
