Vegan meatballs with gravy

For the Gravy:

  • 2 tbsp vegan butter or olive oil
  • 2 tbsp all-purpose flour
  • 2 cups vegetable broth
  • 1 tbsp soy sauce
  • 1 tsp nutritional yeast (optional)
  • Salt & pepper to taste

How to Make Them

Step 1: Prepare the Meatballs

  1. Make the flax egg – Mix flaxseed meal with water and let sit for a few minutes until thickened.
  2. Sauté the veggies – Heat 1 tbsp olive oil in a pan, cook onions & garlic until soft, then add mushrooms and cook until tender.
  3. Mix it all together – In a bowl, combine lentils, cooked veggies, flax egg, breadcrumbs, soy sauce, and spices. Mix well.
  4. Form into balls – Shape the mixture into small meatballs and refrigerate for 30 minutes to firm up.
  5. Cook – Fry in olive oil until golden brown or bake at 375°F (190°C) for 20–25 minutes, flipping halfway through.

Step 2: Make the Gravy

  1. Start with a roux – Melt butter in a saucepan, whisk in flour, and cook 1–2 minutes.
  2. Add liquid – Slowly whisk in broth & soy sauce, stirring to prevent lumps.
  3. Season & finish – Add nutritional yeast (if using) and salt & pepper, then simmer until thickened.

Serving Ideas

✔ Spoon over mashed potatoes, rice, or roasted veggies. ✔ Try them in a sandwich or wrap for a delicious twist. ✔ Pair with a side of sautéed greens for extra nutrition.
