Instructions:
- Sauté Aromatics:
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté for 2-3 minutes until translucent.
- Add Vegetables:
- Add chopped carrot, celery, and bell peppers to the pot. Sauté for another 5-7 minutes until softened.
- Stir in zucchini, broccoli, and cauliflower florets. Cook for an additional 5 minutes.
- Add chopped kale or spinach, sauté for a couple of minutes until wilted.
- Add Liquids and Spices:
- Pour in diced tomatoes, vegetable broth, turmeric, ground cumin, paprika, and ground ginger.
- Season with salt and black pepper to taste. Stir well to combine.
- Simmer:
- Bring soup to a boil, then reduce heat to low. Cover the pot and let it simmer for 20-25 minutes until all vegetables are tender.
- Finish and Serve:
- Remove soup from heat, add fresh lemon juice. Adjust seasoning with more salt, pepper, or lemon juice if needed.
- Ladle soup into bowls and garnish with fresh parsley or cilantro.
