Instructions

  1. Prep the Mashed Potatoes:
    • Boil potatoes in salted water until tender (15-20 mins). Drain, then mash with butter, milk, salt, and pepper until smooth and creamy.
  2. Make the Meatloaf:
    • Preheat oven to 375°F (190°C).
    • In a large bowl, gently mix all meatloaf ingredients until just combined (overmixing = dense meatloaf!).
    • Shape into individual mini-loaves for even cooking.
  3. Assemble the Casserole:
    • Spread mashed potatoes in a foil-lined baking dish.
    • Arrange meatloaves on top.
  4. Bake to Perfection:
    • Cover with foil and bake for 30 mins.
    • Uncover, sprinkle with cheese, and bake 10-15 mins more until bubbly and golden.
  5. Serve & Enjoy:
