Instructions
- Prep the Mashed Potatoes:
- Boil potatoes in salted water until tender (15-20 mins). Drain, then mash with butter, milk, salt, and pepper until smooth and creamy.
- Make the Meatloaf:
- Preheat oven to 375°F (190°C).
- In a large bowl, gently mix all meatloaf ingredients until just combined (overmixing = dense meatloaf!).
- Shape into individual mini-loaves for even cooking.
- Assemble the Casserole:
- Spread mashed potatoes in a foil-lined baking dish.
- Arrange meatloaves on top.
- Bake to Perfection:
- Cover with foil and bake for 30 mins.
- Uncover, sprinkle with cheese, and bake 10-15 mins more until bubbly and golden.
- Serve & Enjoy:
- Garnish with fresh herbs. Let rest 5 mins before serving.
