Traditional Buttermilk Rusks Recipe 🐪

Instructions:

  1. Preheat Oven & Prepare Pan
    • Preheat your oven to 350°F (180°C).
    • Grease a large baking pan (or line it with parchment paper).
  2. Mix Dry Ingredients
    • In a large bowl, whisk together the flour, sugar, salt, and baking powder.
  3. Combine Wet Ingredients
    • In another bowl, mix the buttermilk, melted butter, and egg until well combined.
  4. Make the Dough
    • Pour the wet mixture into the dry ingredients and stir until a soft dough forms.
    • Knead lightly (don’t overwork it) until smooth.
  5. Shape the Rusks
    • Roll the dough into small logs or balls (about 2 inches long) and place them close together in the prepared pan.
  6. First Bake (Drying Phase)
    • Bake for 25–30 minutes until lightly golden and firm.
    • Remove from the oven and let cool slightly.
  7. Slice & Second Bake (Drying Out)
    • Once cool enough to handle, slice the rusks into individual pieces.
    • Place them back on a baking tray, cut side up.
    • Reduce oven temperature to 200°F (100°C) and bake for 1.5–2 hours until completely dry and crisp.
  8. Cool & Store
    • Let the rusks cool completely before storing in an airtight container.
    • They’ll stay fresh for weeks!
