- 2 small onions, thinly sliced
- 4 slices crusty bread
- 1 cup shredded cheddar cheese

Instructions:
1. Preparing the Tomato Soup:
- Aromatic Base:
- Heat olive oil in a large saucepan over medium heat.
- Add diced onion and sauté for 5 minutes until translucent.
- Add minced garlic and cook for 1 minute.
- Building the Flavor:
- Stir in crushed tomatoes, vegetable broth, tomato paste, and basil.
- Add thyme and sugar if desired. Mix well.
- Simmer and Blend:
- Bring to a simmer and cook for 15–20 minutes.
- Use an immersion blender for a smooth texture.
- Stir in cream or milk for a creamier consistency.
- Season with salt and pepper.
2. Preparing the Cheese and Onion Toast:
- Preheat the Broiler:
- Set oven’s broiler to high.
- Assemble the Toast:
- Place bread slices on a baking sheet.
- Layer with thinly sliced onions and shredded cheddar cheese.
- Broil to Perfection:
- Broil for 3–5 minutes until cheese is melted and golden brown.
3. Serving the Dish:
- Plate the Soup and Toast:
- Ladle hot soup into bowls, garnish with parsley or chives.
- Serve alongside cheesy onion toast.
