Tomato Soup with Cheese and Onion Toast

For the Cheese and Onion Toast:

  • 2 small onions, thinly sliced
  • 4 slices crusty bread
  • 1 cup shredded cheddar cheese

Optional Garnish:

  • Fresh parsley or chives, chopped

Instructions:

1. Preparing the Tomato Soup:

  • Aromatic Base:
    • Heat olive oil in a large saucepan over medium heat.
    • Add diced onion and sauté for 5 minutes until translucent.
    • Add minced garlic and cook for 1 minute.
  • Building the Flavor:
    • Stir in crushed tomatoes, vegetable broth, tomato paste, and basil.
    • Add thyme and sugar if desired. Mix well.
  • Simmer and Blend:
    • Bring to a simmer and cook for 15–20 minutes.
    • Use an immersion blender for a smooth texture.
    • Stir in cream or milk for a creamier consistency.
    • Season with salt and pepper.

2. Preparing the Cheese and Onion Toast:

  • Preheat the Broiler:
    • Set oven’s broiler to high.
  • Assemble the Toast:
    • Place bread slices on a baking sheet.
    • Layer with thinly sliced onions and shredded cheddar cheese.
  • Broil to Perfection:
    • Broil for 3–5 minutes until cheese is melted and golden brown.

3. Serving the Dish:

  • Plate the Soup and Toast:
    • Ladle hot soup into bowls, garnish with parsley or chives.
    • Serve alongside cheesy onion toast.
