Directions:
1. Start by seasoning your beef chuck roast generously with salt and pepper. You want that flavor to penetrate every bite!
2. In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully place the roast in the pan. Sear it on all sides until beautifully browned, which should take about 3-4 minutes per side. This step adds so much flavor!
3. Once it’s seared, remove the roast from the skillet and transfer it to a slow cooker or a big pot.
4. Using the same skillet, toss in the chopped onion and minced garlic. Sauté them for about 2-3 minutes until the onion becomes soft and translucent.
5. Now, it’s time to add the diced tomatoes (including the juices), beef broth, oregano, and thyme to the skillet. Stir everything together to combine those lovely flavors.
6. Pour this aromatic mixture over your roast in the slow cooker or pot, making sure it’s well-covered.
7. Cover and cook on low for 8 hours or high for 4 hours. You’ll know it’s ready when the meat is super tender and shreds easily.
8. About 30 minutes before you’re ready to serve, sprinkle that glorious grated Parmesan cheese over the roast. Cover it up for a bit to let the cheese melt into creaminess.
9. When it’s time to eat, slice or shred the roast and serve it with the delicious sauce from the pot. If you have some fresh basil on hand, go ahead and garnish your dish for a pop of color and flavor!
