Instructions:

  1. Preheat & Prep:

    • Preheat oven to 350°F (175°C).

    • Grease a 9-inch pie dish with butter or non-stick spray.

  2. Mix Wet Ingredients:

    • In a large bowl, whisk eggs and sugar until smooth and slightly frothy.

    • Add melted buttermilk, and vanilla extract, mixing well.

  3. Incorporate Dry Ingredients:

    • Gently stir in self-rising flour and salt until just combined.

    • Fold in shredded coconut.

  4. Bake:

    • Pour batter into the prepared pie dish.

    • Bake for 45-50 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.

  5. Cool & Serve:

    • Let the pie cool completely (it will set further as it cools, revealing its magical layers).

    • Slice and serve with your favorite accompaniments.
