1 lb ground Italian sausage

2 tbsp olive oil

1 red bell pepper, diced

1 yellow bell pepper, diced

1 orange bell pepper, diced

1 green bell pepper, diced

2 tbsp roasted garlic paste

½ cup white wine (optional, substitute with broth if preferred)

1 can (14.5 oz) fire-roasted diced tomatoes (with juice)

1 tsp Italian seasoning

2 tbsp fresh parsley, chopped (+ extra for garnish)

1 tsp dried basil (or 1 tbsp fresh basil)

Salt & pepper to taste

12 oz egg noodles

Freshly grated Parmesan cheese (for serving)
👩🍳 Instructions
1. Brown the Sausage & Sauté Peppers
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the sausage and all diced bell peppers. Cook for 8–10 minutes, breaking up the sausage as it browns, until fully cooked and the peppers soften.
2. Build the Sauce
Drain excess fat if needed. Stir in garlic paste, Italian seasoning, parsley, and basil, then season with salt & pepper. Pour in the white wine (let it simmer for 1–2 minutes to cook off the alcohol), then add the fire-roasted tomatoes with their juices. Stir well.
3. Simmer to Perfection
Reduce heat to medium-low and let the sauce simmer for 10–15 minutes, stirring occasionally, until slightly thickened and fragrant.
4. Cook the Noodles
Meanwhile, boil the egg noodles in salted water according to package directions. Drain well.
5. Bring It All Together
Add the cooked noodles to the skillet and toss until fully coated in the rich, savory sauce. Let them soak up the flavors for a minute.
6. Serve & Enjoy!
Plate the noodles, top with freshly grated Parmesan and a sprinkle of parsley. Serve hot and savor every bite!
