Directions
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
Add the ground beef to the skillet, cooking until browned and fully cooked. Drain any excess fat.
Stir in the sliced bell peppers, salt, black pepper, and paprika. Cook for another 5 minutes until the peppers are slightly tender.
Transfer the beef and pepper mixture into two individual-sized aluminum foil pans.
Sprinkle the shredded cheddar and mozzarella cheese evenly over the top of the beef mixture.
Place the pans in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and golden brown.
Remove from the oven and let cool slightly before serving.
Variations & Tips
For a spicier version, add a pinch of cayenne pepper or some chopped jalapeños to the beef mixture. You can also substitute the ground beef with ground turkey or chicken for a lighter option. If you prefer a creamier texture, mix in a half cup of sour cream or cream cheese into the beef mixture before baking. For a vegetarian version, replace the beef with a mix of mushrooms and zucchini, adjusting the seasoning to taste.
