Step 1: Clean the Gizzards

✔ Place gizzards in a bowl, pour buttermilk over them. ✔ Cover & refrigerate for 2+ hours, preferably overnight.

Step 3: Prepare the Breading

✔ Mix flour, cornstarch, garlic powder, onion powder, paprika, salt, & pepper.

Step 4: Coat the Gizzards

✔ Remove gizzards from marinade (do not dry). ✔ Toss in flour mixture, coat completely. ✔ For extra crispiness, double-dip: back in buttermilk, then coat in flour again. ✔ Let rest on a tray for 10–15 minutes before frying.

Step 5: Fry to Perfection

✔ Heat oil to 350–365°F (175–185°C). ✔ Fry gizzards in small batches for 5–7 minutes, until deep golden brown. ✔ Drain on a paper towel-lined plate.
