Instructions

1. Prep the Ingredients

  • Rinse lentils until water runs clear.

  • Cube beef, chop onions, mince garlic, dice carrots & potatoes.

  • Grate or finely chop tomatoes.

  • Slice chilies (remove seeds for milder heat).

2. Brown the Beef

  • Heat oil in a large pot over medium heat.

  • Sear beef until browned on all sides. Remove and set aside.

3. Sauté the Aromatics

  • In the same pot, sauté onions and garlic until soft (~5 min).

  • Add carrots, cook for another 5 minutes.

4. Simmer the Soup

  • Return beef to the pot, add water, and bring to a boil.

  • Stir in lentils, bay leaves, tomato paste, tomatoes, turmeric, black pepper, and salt.

  • Simmer for 30-40 min until beef is tender and lentils soften. Skim off any foam.

5. Add Potatoes & Chilies

  • Stir in potatoes, cook for 15-20 min until tender.

  • Add chilies in the last 10-15 min for a spicy infusion.

6. Finish & Serve

  • Adjust seasoning (salt/pepper as needed).

  • Discard bay leaves.

  • Stir in fresh herbs just before serving.
