Step-by-Step Instructions
1. Prepare & Sear the Steak
- Pat the steaks dry with paper towels to ensure a perfect sear.
- Rub generously with Cajun seasoning, smoked paprika, garlic powder, and salt.
- Heat olive oil in a heavy skillet (cast iron works best) over high heat until shimmering.
- Sear steaks for 3-4 minutes per side for medium-rare (adjust time for desired doneness).
- In the last minute, add butter, smashed garlic, and herbs. Tilt the pan and baste the steaks with the melted butter for extra flavor.
- Transfer to a plate, tent with foil, and let rest for 5-10 minutes before slicing.
2. Cook the Pasta
- Boil pasta in well-salted water until al dente (check package instructions).
- Reserve ½ cup pasta water before draining—this helps thicken the Alfredo sauce later.
3. Make the Creamy Alfredo Sauce
- In the same skillet (keep those delicious steak drippings!), melt butter over medium heat.
- Sauté minced garlic for 30 seconds until fragrant.
- Pour in heavy cream and simmer for 2 minutes, stirring occasionally.
- Reduce heat to low and stir in Parmesan, black pepper, and nutmeg until smooth and creamy.
- Toss in the cooked pasta, adding reserved pasta water as needed for a silky texture.
4. Slice & Serve
- Slice the rested steak against the grain for maximum tenderness.
- Plate a generous portion of Alfredo pasta and top with juicy Cajun steak slices.
- Garnish with extra Parmesan, chopped parsley, or a sprinkle of red pepper flakes for heat.
