Ingredients:

Salad Base:

  • 4-6 cups chopped Romaine lettuce or mixed greens

  • 2 cups cooked chicken breast, diced or shredded (rotisserie chicken works well)

  • 1 cup corn kernels (grilled, roasted, or canned—drained and rinsed)

  • 1 large avocado, diced

  • 1 cup cherry tomatoes, halved

  • ¼ cup crumbled Cotija or feta cheese

  • (Optional: ½ cup black beans, ¼ cup diced red onion, or ¼ cup chopped cilantro)

Creamy Dressing (Choose One):

Chipotle Ranch:

  • ½ cup ranch dressing

  • 1-2 tbsp minced chipotle peppers in adobo sauce (adjust for spice)

  • 1 tbsp lime juice

  • 1-2 tbsp milk or water (to thin if needed)

Cilantro Lime Crema:

  • ½ cup Greek yogurt or sour cream

  • ¼ cup chopped cilantro

  • 1-2 tbsp lime juice

  • 1 garlic clove, minced (optional)

  • Salt & pepper to taste

  • 1-2 tbsp water (to thin if needed)

Smoky Vinaigrette (Orange/Brown Dressing):

  • 3 tbsp olive oil

  • 2 tbsp apple cider vinegar or red wine vinegar

  • 1 tbsp honey or maple syrup

  • 1 tsp smoked paprika

  • ½ tsp ground cumin

  • Pinch of cayenne (optional, for heat)

  • Salt & black pepper to taste
