Ingredients:
Salad Base:

2 cups cooked chicken breast, diced or shredded (rotisserie chicken works well)

1 cup corn kernels (grilled, roasted, or canned—drained and rinsed)

1 large avocado, diced

1 cup cherry tomatoes, halved

¼ cup crumbled Cotija or feta cheese

(Optional: ½ cup black beans, ¼ cup diced red onion, or ¼ cup chopped cilantro)
Creamy Dressing (Choose One):
Chipotle Ranch:

½ cup ranch dressing

1-2 tbsp minced chipotle peppers in adobo sauce (adjust for spice)

1 tbsp lime juice

1-2 tbsp milk or water (to thin if needed)
Cilantro Lime Crema:

½ cup Greek yogurt or sour cream

¼ cup chopped cilantro

1-2 tbsp lime juice

1 garlic clove, minced (optional)

1-2 tbsp water (to thin if needed)
Smoky Vinaigrette (Orange/Brown Dressing):

2 tbsp apple cider vinegar or red wine vinegar

1 tbsp honey or maple syrup

1 tsp smoked paprika

½ tsp ground cumin

Pinch of cayenne (optional, for heat)
