Instructions
- Prepare Noodles & Edamame
- Cook noodles according to package instructions. Drain and rinse with cold water to prevent sticking. Set aside.
- Boil edamame for 4 minutes, then drain and set aside.
- Make the Sauce
- In a bowl, mix teriyaki sauce, soy sauce, maple syrup, rice vinegar, and sriracha. Set aside.
- Stir-Fry Vegetables & Beef
- Heat oil in a wok or large skillet over medium-high heat.
- Sauté onion and carrot for 5-7 minutes, stirring frequently.
- Add bell pepper and cook for 2-3 minutes until slightly softened.
- Toss in beef strips, zucchini, edamame, garlic, and ginger. Season with salt & pepper.
- Cook for 5 minutes or until beef is fully cooked. Remove everything from the wok.
- Finish the Dish
- Pour the sauce into the empty wok and simmer for 2-3 minutes until slightly thickened.
- Return the beef and vegetables to the wok, mixing well.
- Add the drained noodles, tossing until fully coated and heated through (~5 minutes).
- Serve
- Dish hot, garnished with sesame seeds or green onions if desired.
