Ingredients:
– **For the Shrimp Spring Rolls:**
– 1 lb cooked shrimp, peeled and deveined
– 1 package rice paper wrappers (about 8-10 pieces)
– 1 cup lettuce leaves (Boston lettuce or Romaine), thinly sliced
– 1 medium carrot, julienned
– ½ cucumber, julienned
– Fresh herbs (such as mint, cilantro, and basil)
– ¼ cup cooked rice noodles (optional)

– For the Peanut Dipping Sauce.
– ¼ cup peanut butter (smooth)
– 2 tbsp hoisin sauce
– 1 tbsp soy sauce
– 1 tbsp rice vinegar
– 1 tbsp water (or more for desired consistency)
– 1 tsp sesame oil
– Crushed peanuts for garnish (optional)
– Chili flakes for garnish (optional)
