  • 3 tbsp sesame oil

  • 1 cup frozen peas and carrots, thawed

  • 1 small onion, finely chopped

  • 2 tsp minced garlic

  • 2 eggs, lightly beaten

  • 1/4 cup soy sauce (adjust to taste)

  • Optional add-ins: diced cooked shrimp, ham, green onions, or other veggies
