Directions:
Boil & Sauté Veggies:
Boil baby potatoes and carrots until fork-tender (10–12 mins). Drain and toss in a pan with butter, garlic, salt, pepper, and herbs for 2–3 mins. Set aside. Sear the Cod:
Pat cod dry, season with salt and pepper. Sear in hot olive oil, 3–4 minutes per side, until golden and flaky. Set aside to rest. Sear the Scallops:
In the same pan, sear scallops (dry them first!) 1–2 minutes per side until they form a nice golden crust. Warm the Mash:
Reheat or prepare mashed potatoes with butter and seasoning to taste. Plate & Serve:
Spoon mashed potatoes on the plate, top with cod and scallops. Serve with garlic butter-coated baby potatoes and carrots. Garnish with fresh herbs.
