How to Make It
1. Prepare the Pan
- Grease and line a 9×13-inch baking dish (or use a smaller pan for thicker pieces).
2. Melt Initial Ingredients
- In a large microwave-safe bowl, combine sugar, milk, and butter.
- Heat in 30-second intervals, stirring until butter melts and sugar begins to dissolve.
3. Cook on the Stove
- Pour mixture into a deep saucepan over medium-high heat. Stir occasionally.
- Bring to a gentle boil, then add condensed milk, reduce heat to medium, and stir continuously.
4. Simmer Until Caramelized
- Cook for 15–20 minutes, stirring frequently, until thickened and golden caramel in color.
- Temperature should reach 240–248°F (soft ball stage)—test by dropping a small amount into cold water; it should form a soft ball.
5. Flavor & Beat the Mixture
- Remove from heat and stir in vanilla or whiskey, if using.
- Beat with a hand mixer for 8–10 minutes, or use a spoon (takes longer).
- Stop mixing once the mixture leaves trails.
6. Set the Tablet
- Pour into the prepared pan, spreading evenly.
- After 10 minutes, lightly score the surface into squares.
- Let set for 2–4 hours (or overnight) before cutting.
