Instructions:
1. Prep the Ingredients

Chop the charcuterie into small pieces.

Finely dice the onion and bell pepper (if using).

Grate the cheese and set aside.

Crack the eggs into a bowl, season with salt & pepper, and whisk until well combined.
2. Cook the Charcuterie & Veggies (Optional)

Heat 1 tbsp butter in a non-stick skillet over medium heat.

Add the chopped onion and bell pepper (if using) and sauté for 2-3 minutes until softened.

Add the chopped charcuterie and cook for another 1-2 minutes to crisp slightly. Remove from the pan and set aside.
3. Cook the Omelette

In the same skillet, melt the remaining 1 tbsp butter over medium-low heat.

Pour in the whisked eggs, tilting the pan to spread them evenly.

Let the eggs cook undisturbed for about 30 seconds until the edges set.
4. Add Fillings & Cheese

Sprinkle the cooked charcuterie (and veggies) over one half of the omelette.

Top with grated cheese.

Using a spatula, gently fold the other half of the omelette over the filling.
5. Finish & Serve

Cook for another 30 seconds to 1 minute until the cheese melts.

Slide the omelette onto a plate and garnish with fresh herbs.

Serve immediately while hot and enjoy!
Tip: For extra richness, add a dollop of sour cream or a drizzle of hot sauce.
