Instructions:
Prepare the Potatoes:

Wash the baby potatoes and pat them dry with a paper towel.
Cut the potatoes in half, or if they’re larger, into quarters.

In a large bowl, toss the halved potatoes with olive oil, garlic powder, dried thyme, paprika, salt, and pepper until the potatoes are well-coated.
Roast the Potatoes:
Spread the seasoned potatoes out in a single layer on a baking sheet lined with parchment paper for easy cleanup.
Roast the potatoes in the preheated oven for 25-30 minutes, or until they are golden brown and crispy. Halfway through, toss the potatoes to ensure even cooking.
Finishing Touches:
Once roasted, remove the potatoes from the oven and sprinkle them with grated Parmesan cheese while they’re still hot. Toss gently to coat the potatoes evenly with the cheese.
Garnish and Serve:
Garnish with freshly chopped parsley and serve immediately.
