Instructions:

  1. Prep & Preheat:

    • Preheat the oven to 180°C (355°F).

    • Grease a baking dish lightly with oil.

  2. Prepare the Egg Mixture:

    • In a bowl, whisk together eggs, sour cream, salt, and pepper. Stir in the spring onions.

  3. Layer the Bake:

    • Arrange potato slices in the baking dish.

    • Pour a portion of the egg mixture over the potatoes.

    • Add a layer of tomato and sausage slices, then sprinkle with oregano and paprika.

    • Repeat layers, finishing with the remaining egg mixture.

    • Top with grated Parmesan.

  4. Bake:

    • Remove, add remaining sausage slices on top, and bake for another 20 minutes until golden.
