Instructions

Step 1: Prep & Cook Filling

  1. Preheat oven to 375°F (190°C).

  2. In a large skillet over medium-high heat, cook the ground beef, breaking it into crumbles until fully browned.

  3. Add onions, bell peppers, and chopped pepperoni. Cook until veggies soften (~5 min).

  4. Stir in garlic and cook for 2 more minutes.

  5. Remove from heat and mix in pizza sauce, Italian seasoning, ricotta, mozzarella, and bacon until well combined.

Step 2: Assemble Enchiladas

  1. Spoon filling onto the center of each tortilla, roll tightly, and place seam-side down on a greased baking sheet.

Step 3: Add Toppings & Bake
