Step 1: Prep & Cook Filling

In a large skillet over medium-high heat, cook the ground beef, breaking it into crumbles until fully browned.

Add onions, bell peppers, and chopped pepperoni. Cook until veggies soften (~5 min).

Step 2: Assemble Enchiladas

Spoon filling onto the center of each tortilla, roll tightly, and place seam-side down on a greased baking sheet.
