⨠Instructions:
1ļøā£Ā Simmer the brine:Ā In a pot, combineĀ water, vinegar, olive oil, garlic, salt, sugar, red pepper flakes, black peppercorns, bay leaf, mustard seeds, and coriander seeds. Bring to a boil, then reduce heat and let simmer forĀ 5 minutesĀ to infuse flavors.
2ļøā£Ā Cook the shrimp:Ā Add theĀ shrimpĀ and cook forĀ 2-3 minutes, just until they turn pink and opaque. Avoid overcooking!
3ļøā£Ā Cool & layer:Ā Remove from heat and let cool forĀ 10 minutes. In a clean jar, layer theĀ sliced onions, then pour the shrimp and brine mixture over them.
4ļøā£Ā Pickle to perfection:Ā Seal the jar and refrigerate forĀ at least 24 hoursĀ (48 hours for deeper flavor). Serve chilled as an appetizer, on salads, or with crusty bread!
