PREPARATION

1 In a large mixing bowl, add butter and powdered sugar. Mix until fully combined and smooth. Mix in vanilla extract and other extract if using.

2 Add flour and salt, then mix until well combined.

3 Roll dough into two logs about 2.5 inches in diameter. Cover tightly with plastic wrap and place in freezer for at least 90 minutes.

4 When ready to bake, preheat oven to 375 degrees F and line a baking sheet with parchment paper.

5 Slice log into rounds about 1/4-inch thick and evenly arrange on baking sheet.

6 Bake cookies for 7-9 minutes or until edges just begin to brown.

7 Allow cookies to cool before enjoying or storing.
