Instructions:

Prep the Oven & Pan: Preheat your oven to 400°F (200°C). Lightly grease a large roasting pan or sheet tray.

Season the Chicken: In a large bowl, toss the chicken pieces with 2 tbsp olive oil, minced garlic, paprika, salt, and black pepper until evenly coated.

Prep the Potatoes: In the same bowl (for extra flavor), toss the halved potatoes with the remaining 1 tbsp olive oil and a pinch of salt and pepper.

Arrange & Roast: Place the chicken skin-side up in the pan, then scatter the potatoes around it in a single layer.

Cook to Perfection: Roast for 35-45 minutes, or until the chicken reaches 165°F (75°C) internally and the potatoes are crispy and tender.

Finish & Serve: For extra zing, drizzle with lemon juice and sprinkle with fresh parsley. Let the chicken rest for 5 minutes before serving.
