Instructions:
1. Bring the Roast to Room Temperature
- Take the prime rib out of the refrigerator 1 hour before cooking to allow it to come to room temperature for even cooking.
2. Preheat the Oven
- Preheat your oven to 550°F (290°C). (Ensure your oven is clean to avoid smoke!)
3. Season the Roast
- In a small bowl, mix salt, pepper, and garlic powder to taste.
- Pat the roast dry with paper towels, then generously coat it with the seasoning blend, covering all sides.
4. Roast at High Heat
- Place the prime rib fat side up in a shallow roasting pan (no rack needed).
- Roast at 550°F for:
- 5 minutes per pound for rare (120-125°F internal temp)
- 6 minutes per pound for medium (130-135°F internal temp)
- 7 minutes per pound for well-done (140°F+ internal temp)
5. Turn Off the Oven & Rest (Most Important Step!)
- DO NOT OPEN THE OVEN DOOR!
- After the cooking time is up, turn off the oven and let the roast sit inside, undisturbed, for 2 full hours. The residual heat will finish cooking it perfectly.
6. Slice & Serve
- Remove the roast from the oven—it will be juicy, tender, and perfectly cooked from edge to edge.
- Slice and serve immediately.
