1. Prep: Preheat oven to 350°F (175°C). Grease a 10-inch springform pan.

2. Make the Batter: In a bowl, beat butter, egg, and milk until smooth. Add flour, salt, baking powder, and pudding mix, and beat 2 more minutes until creamy.

3. Pre-Bake: Pour batter into the prepared pan and bake for 10 minutes.

4. Mix the Cream Layer: While baking, beat together cream cheese, sugar, and peach juice until fluffy (about 2 minutes).

5. Assemble: Remove cake from the oven. Evenly scatter chopped peaches on top, then spread cream mixture over peaches all the way to the edges.

6. Finish & Bake: In a small bowl, mix sugar and cinnamon, and sprinkle it over the top. Bake for 30–35 minutes, until golden and set.

7. Cool: Let cool completely in the pan. Slice and serve chilled or room temp. Enjoy!
