Prepare the patties:

Shape the ground beef into 3 thin patties, roughly matching the size of your bread slices.

Season both sides with onion powder, garlic powder, salt, and pepper.

Cook over medium-high heat in a skillet until fully cooked. Remove and set aside.

Make the secret sauce:

In a small bowl, mix mayonnaise, bacon pieces, ketchup, sugar, and relish until smooth. Set aside.

Assemble the melts:

Wipe the skillet clean and reduce heat to medium.

Butter one side of each bread slice.
-
Place 3 slices in the skillet, buttered side down.

Layer each with:

2 slices provolone
-
1 cooked patty
-
2 slices cheddar
-

Spread a thin layer of the secret sauce on the unbuttered side of the remaining bread slices, then place them sauce side down on top of the melts.

Cook & serve:

Once the provolone has melted and the bottom bread is golden brown (about 3–4 minutes), carefully flip each melt.

Toast the other side until crispy and the cheese is fully melted.

Slice in half and serve hot.
