Pan-Seared Steak with Creamy Mushroom Sauce, Garlic Roasted Potatoes, and Herbed Asparagus

Ingredients

For the Steak:

  • 2 ribeye or sirloin steaks (about 1-inch thick)

  • Salt & freshly ground black pepper

  • 1 tbsp olive oil

  • 1 tbsp butter

For the Creamy Mushroom Sauce:

  • 1 tbsp butter

  • 1 tbsp olive oil

  • 1½ cups mushrooms, sliced (cremini or button)

  • 1 garlic clove, minced

  • ½ cup heavy cream

  • ¼ cup beef broth

  • Salt & pepper to taste

  • Fresh parsley, chopped (for garnish)

For the Garlic Roasted Potatoes:

  • 3 medium potatoes, cut into 1-inch cubes

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp paprika

  • Salt & pepper to taste

For the Herbed Asparagus:

  • 1 bunch asparagus, woody ends trimmed

  • 1 tbsp olive oil

  • Salt & pepper to taste
