Instructions

  1. Prep: Preheat oven to 400°F (200°C). Line a large baking sheet with foil and lightly grease with cooking spray.
  2. Chop: Slice sausage into bite-sized pieces. Cut onions into chunks. Wash and halve the baby potatoes (no need to peel!).
  3. Season: In a large bowl, combine sausage, onions, and potatoes. Drizzle with olive oil and toss to coat.
  4. Spice Mix: In a small bowl, mix salt, pepper, smoked paprika, and Cajun seasoning. Sprinkle over the sausage and potatoes, tossing until evenly coated.
  5. Roast: Spread mixture in a single layer on the baking sheet. Roast for 50–55 minutes, or until potatoes are fork-tender and lightly crisped.
  6. Serve: Let cool slightly, then enjoy hot as a hearty one-pan meal!

Tip: For extra crispiness, broil for 2–3 minutes at the end. Perfect with a sprinkle of fresh parsley or a dash of hot sauce!
