Instructions

  1. Preheat & Prep:
    • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Make the Garlic Herb Oil:
    • In a small bowl, mix olive oil, garlic, paprika, thyme, rosemary, salt, and pepper.
  3. Roast the Potatoes:
    • Toss halved potatoes with ⅓ of the garlic herb oil and spread on the pan. Roast for 15 minutes.
  4. Add Salmon & Veggies:
    • Remove pan from oven. Push potatoes to one side. Add salmon (skin-side down), green beans, and cherry tomatoes.
    • Drizzle remaining oil over everything, coating evenly. Top each salmon fillet with a lemon slice.
  5. Finish Roasting:
    • Return to oven for 12–15 minutes, until salmon flakes easily and veggies are tender.
  6. Garnish & Serve:
    • Sprinkle with fresh parsley and serve hot. Enjoy a flavorful, fuss-free meal!
