Instructions
- Preheat & Prep:
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
- Make the Garlic Herb Oil:
- In a small bowl, mix olive oil, garlic, paprika, thyme, rosemary, salt, and pepper.
- Roast the Potatoes:
- Toss halved potatoes with ⅓ of the garlic herb oil and spread on the pan. Roast for 15 minutes.
- Add Salmon & Veggies:
- Remove pan from oven. Push potatoes to one side. Add salmon (skin-side down), green beans, and cherry tomatoes.
- Drizzle remaining oil over everything, coating evenly. Top each salmon fillet with a lemon slice.
- Finish Roasting:
- Return to oven for 12–15 minutes, until salmon flakes easily and veggies are tender.
- Garnish & Serve:
- Sprinkle with fresh parsley and serve hot. Enjoy a flavorful, fuss-free meal!
