Mix dry ingredients
In a medium bowl, combine oats, protein powder, dried blueberries, lemon zest, cinnamon, chia seeds, and shredded coconut. Stir well to evenly distribute everything. -
Add wet ingredients
Pour in almond butter and honey, mixing until fully combined. The mixture should stick together when pressed. If too dry, add 1 tsp water or extra honey; if too sticky, add more oats or protein powder. -
Roll into bites
Scoop about 1 tbsp of mixture and roll into 1-inch balls. If sticky, lightly dampen hands or chill the mixture for 10 minutes first. -
Chill to set
Place bites on parchment paper and refrigerate for at least 10 minutes to firm up. -

Keep in an airtight container in the fridge for up to 1 week or freeze for longer storage.
