Instructions

  1. Mix dry ingredients
    In a medium bowl, combine oats, protein powder, dried blueberries, lemon zest, cinnamon, chia seeds, and shredded coconut. Stir well to evenly distribute everything.

  2. Add wet ingredients
    Pour in almond butter and honey, mixing until fully combined. The mixture should stick together when pressed. If too dry, add 1 tsp water or extra honey; if too sticky, add more oats or protein powder.

  3. Roll into bites
    Scoop about 1 tbsp of mixture and roll into 1-inch balls. If sticky, lightly dampen hands or chill the mixture for 10 minutes first.

  4. Chill to set
