Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix meatball ingredients – Combine ground chicken, ricotta, Parmesan, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper in a bowl.
  3. Form meatballs – Roll mixture into golf ball-sized portions, place on a baking sheet, and drizzle with olive oil.
  4. Bake for 20–25 minutes until golden brown & cooked through.
  5. Prepare Alfredo sauce – In a pan, melt butter, whisk in flour, and cook for 1 minute.
  6. Add milk & cream – Whisk constantly until thickened, then stir in Parmesan, nutmeg, salt & pepper until smooth.
  7. Cook spinach – Stir in chopped spinach, cook for 2–3 minutes until wilted.
  8. Serve hot – Top baked meatballs with creamy spinach Alfredo sauce.
